Sayama sencha, as one of the five great tea regions of Japan, is known for its deep, full-bodied flavor. A cupping of these teas is a taste of the process of creating Japan's representative tea leaf.
Family operated tea farm, Morita Tea Garden, has been around for 11 generations. Toichi Morita blends several different tea plant cultivars at his private home factory into two grades of sencha. He also offers his aracha, the state of the tea leaf before it is refined into sencha, and kukicha -- made from leaf stems removed as the tea is refined into sencha.
