Farmed in Shiga Prefecture, and finished at the Nishide Tea Factory, this Kabusecha green tea is shaded for 2 weeks before harvest and carefully refined to create a beautiful leaf. Enjoy the rich umami aroma with buttery notes and light but sweet aftertaste. 10g, 100g sizes packed by Yunomi.
About the “Finishing” process: Tea farmers in Japan are primarily responsible for cultivating the tea leaves and processing them until they are dry. The refinement of the tea leaves occurs usually at tea factories who also often are wholesalers of tea leaves as well. This refinement includes further heating the leaves to remove moisture and set the flavor; filtering out tea dust, leaf stems, and leaf clumps; separating leaves by size and color, then sometimes blending leaves from multiple fields, farms, and/or regions to make a certain taste profile. Some of this (particularly the last blending step) is also often conducted by tea shops themselves.
The family-operated Nishide Tea Factory in Uji are artisans when it comes to leaf refinement, and their leaves are an excellent example of tea from Uji, Kyoto, or “Ujicha”.
About the Vendor
The Nishide Tea Factory is managed by husband and wife team, Takashi and Atsuko Nishide and their family. Established over 140 years ago, the Nishide family buys aracha tea (unrefined leaves) from the tea farms of Kyoto and surrounding prefectures, and refines them further to craft high quality tea leaves that are uniform in color and shape, and of course excellent in flavor.
